Instructions

  1. Pat chicken breasts dry and butterfly them to create pockets for stuffing.
  2. Tenderize thick breasts with a meat mallet for even cooking.
  3. Season chicken with salt, pepper, and paprika inside and out.
  4. Sauté mushrooms, spinach, and garlic with herbs until softened.
  5. Mix sautéed vegetables with mozzarella and cream cheese to prepare the filling.
  6. Stuff the chicken pockets with the filling and secure with toothpicks.
  7. Sear the stuffed chicken in a hot skillet until golden brown.
  8. Transfer to an oven and bake at 375°F (190°C) for 15-20 minutes, ensuring the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for 5 minutes before serving.
