Ingredients

  • – 1 lb beef chuck, cut into 1-inch cubes
  • – 4 cups beef broth
  • – 2 cups water
  • – 1 cup carrots, chopped
  • – 1 cup potatoes, peeled and diced
  • – 1 cup green beans, trimmed and cut into 1-inch pieces
  • – 1 cup corn (fresh or frozen)
  • – 1 onion, chopped
  • – 2 cloves garlic, minced
  • – 1 can (14.5 oz) diced tomatoes, undrained
  • – 1 teaspoon dried thyme
  • – 1 teaspoon dried basil
  • – Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the beef chuck over medium heat until it’s browned on all sides.
  2. Add the chopped onion and minced garlic to the pot, and sauté for about 2-3 minutes until the onion becomes translucent.
  3. Pour in the beef broth and water. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low and let it simmer for about 30 minutes.
  5. After 30 minutes, add the chopped carrots, diced potatoes, green beans, corn, diced tomatoes, dried thyme, dried basil, salt, and pepper to the pot.
  6. Continue to simmer the soup for another 30 minutes or until the vegetables are tender and the beef is cooked through.
  7. Adjust the seasoning if necessary, and serve hot.
