Ingredients

  • – 2 cans (14.75 oz) salmon, drained and flaked
  • – 1/2 cup breadcrumbs
  • – 1/4 cup onion, finely chopped
  • – 2 large eggs, beaten
  • – 1 tablespoon lemon juice
  • – 1 teaspoon Dijon mustard
  • – Salt and pepper to taste
  • – Oil for frying (vegetable or olive oil)

Instructions

  1. Discard the liquid from the canned salmon, but keep it to one side, and then crumble the salmon after removing any skin or bones.
  2. In a mixing bowl, merge together salmon, egg which has been whisked, lemon juice, spring onions, and a dollop of mayonnaise.
  3. To this blend, add either Creole or Old Bay seasoning along with salt, ground black pepper, and crumbled saltine crackers.
  4. Shape this mixture into patties that are approximately ½ inch in thickness and have a diameter of about 4 inches. If required, incorporate some of the retained salmon fluid. 
  5. For 15-30 minutes chill these patties in the refrigerator to ensure they develop a crispy texture when fried.
  6. Pour peanut oil into a cast iron frying pan and heat over medium flame before adding patties. Fry them for around 3-4 minutes on each side until they turn golden brown. 
  7. Transfer cooked patties onto kitchen paper to absorb any surplus oil before serving with accompaniments like mashed potatoes, oven-roasted vegetables or even inside tacos.
