- ⅔ cup Libby’s pumpkin
- ¾ cup flour
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- Filling: 8 oz cream cheese
- 1 cup powdered sugar
- 6 tablespoons butter
- 1 teaspoon vanilla
- Beat eggs and sugar until thick
- Stir in pumpkin
- Add dry ingredients
- Spread in lined 15×10 pan
- Bake at 375°F for 15 minutes
- Roll in towel while hot
- Cool completely
- Unroll, spread filling
- Re-roll and chill
