Classic pumpkin roll cake filled with cream cheese frosting – a perfect fall dessert that looks impressive but is surprisingly easy to make.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • ⅔ cup Libby’s pumpkin
  • ¾ cup flour
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • Filling: 8 oz cream cheese
  • 1 cup powdered sugar
  • 6 tablespoons butter
  • 1 teaspoon vanilla

Instructions

  1. Beat eggs and sugar until thick
  2. Stir in pumpkin
  3. Add dry ingredients
  4. Spread in lined 15×10 pan
  5. Bake at 375°F for 15 minutes
  6. Roll in towel while hot
  7. Cool completely
  8. Unroll, spread filling
  9. Re-roll and chill
