  • Kielbasa sausage, sliced — 14 oz
  • Onion, diced — 1 medium
  • Red bell pepper, diced — 1 medium
  • Green bell pepper, diced — 1 medium
  • Garlic, minced — 3 cloves
  • Chicken broth — 2 1/2 cups
  • Diced tomatoes — 15 oz can
  • Heavy cream — 1 cup
  • Italian seasoning — 1 1/2 teaspoons
  • Salt — 1 teaspoon
  • Black pepper — 1/4 teaspoon
  • Cayenne pepper — 1/4 teaspoon
  • Penne pasta, uncooked — 16 oz
  • Monterey Jack cheese, shredded — 1 1/2 cups

Instructions

  1. In a large Dutch oven or skillet, heat a tablespoon of butter over medium-high heat.
  2. Add the sliced kielbasa sausage and cook, stirring occasionally, until lightly browned, about 5 minutes.
  3. Add the diced onion, red and green bell peppers, and minced garlic to the pan. Sauté for 3-4 minutes, until the vegetables are softened.
  4. Pour in the chicken broth and stir in the uncooked penne pasta. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is al dente.
  5. Stir in the heavy cream, diced tomatoes, Italian seasoning, salt, black pepper, and cayenne pepper. Taste and adjust seasoning as needed.
  6. Remove from heat and sprinkle the shredded Monterey Jack cheese over the top. Cover and let the cheese melt for a minute or two.
