  4. First Rise: Place the dough in a greased bowl, cover with a clean cloth, and let rise in a warm place for about 1 or 2 hours, or until doubled in size.
  5. Shape the Rolls: After the dough has risen, punch it down light to remove the air. Divide into equal portions-mostly 8 to 12, depending on the size of a roll you prefer. Take each piece and roll into an oval-shaped form, tapering the ends a little for a classical hoagie shape. Second Rise: Place the formed rolls on a paper-lined baking sheet. Cover loosely and let rise again, about 30 to 45 minutes, until puffed. Add seeds and egg wash. Preheat oven to 400°F/200°C. Beat the egg; using a pastry brush, lightly coat each roll with the beaten egg. You can sprinkle sesame seeds on top if you’d like, for flavor and texture.
