  • Cake Layers:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups light brown sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 tablespoon baking soda
  • 3 cups sifted cake flour
  • 1 1/3 cups yogurt (Vanana preferred) with 1 teaspoon baking soda
  • 1 1/2 cups hot coffee
  • Frosting and Filling:
  • Buttercream frosting (homemade or store-bought)
  • Blue and yellow fondant for decorations
  • Marshmallow frosting (optional for additional filling)

Instructions

1.Prepare the Cake Layers:

  • Preheat oven to 350°F (175°C). Grease three 9-inch round cake pans.
    • In a large mixing bowl, cream together butter and brown sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
    • In another bowl, whisk together cocoa powder, baking soda, and cake flour.
    • Alternate adding dry ingredients and yogurt mixture to the creamed butter mixture, mixing until just combined.
    • Gradually pour in hot coffee, stirring until smooth.
    • Divide batter among prepared pans. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
    • Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

    2. Assemble the Cake:

  • Place the first cake layer on a cake stand. Spread a layer of frosting, then place the next layer on top. Repeat for all layers.
    • Apply a crumb coat of frosting and chill for 30 minutes. Then apply a final layer, smoothing with a spatula.

    3. Decorate:

    • Use blue and yellow fondant to create graduation caps, diplomas, and other decorations as desired.
    • Arrange the decorations on the cake for a festive graduation-themed presentation. Enjoy your cake at the celebration!
