1–1.5 lbs boneless, skinless chicken thighs or breasts
2–3 tbsp lime juice
1/2 cup chicken broth
2 tbsp tomato paste
1 cup diced tomatoes
1/2 cup diced onions
1 medium avocado, diced
1 cup shredded lettuce
1/2 cup shredded cheese
1/4 cup sour cream
1/2 cup salsa
1/2 cup guacamole
4–6 lime wedges
8–12 corn or flour tortillas
Instructions
Prepare the chicken by coating it in a homemade taco seasoning mix.
Heat a skillet over medium-high heat, add oil, and cook the chicken for about 3 minutes per side until golden brown and fully cooked (internal temperature of 165°F).
Shred or chop the cooked chicken into small pieces.
In the same pan, add chicken broth, tomato paste, and remaining seasoning. Simmer until thickened to create a sauce.
Warm tortillas as per package instructions or toast them for added flavor.
Assemble tacos by adding the chicken, toppings, and a squeeze of lime juice.
