A classic, healthy, and delicious Chinese-inspired dish that’s quick and easy to prepare for busy weeknights.

Ingredients

  • 2 lbs of boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups of fresh broccoli florets
  • 1/2 cup of chicken broth
  • 3 tablespoons of soy sauce
  • 2 cloves of garlic, minced
  • 1 tablespoon of honey
  • 1 teaspoon of cornstarch
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix the chicken broth, soy sauce, garlic, honey, and cornstarch for the stir-fry sauce.
  2. Heat the vegetable oil in a large wok or skillet over high heat.
  3. Add the chicken and stir-fry for 5-7 minutes, until it’s fully cooked.
  4. Add the broccoli florets and stir-fry for another 3-5 minutes, until they’re tender but still crisp.
  5. Pour the sauce into the wok and let it simmer for 2-3 minutes, until it thickens.
  6. Taste and adjust the seasoning with salt and pepper if needed.
  7. Serve the chicken and broccoli over steamed rice or your favorite side dish.
