  • 46 boneless, skinless chicken breasts
  • 1/2 cup Dijon mustard
  • 1/4 cup honey
  • 1/4 cup mayonnaise
  • 68 slices of bacon, cooked and crumbled
  • 1 cup Colby Jack cheese, shredded
  • 8 oz mushrooms, sliced
  • Salt
  • Black pepper
  • Paprika or Cajun spice mix

Instructions

  1. Pound the chicken breasts to 3/4-inch thickness for even cooking.
  2. Season the chicken with salt, pepper, and paprika or Cajun spice mix.
  3. Optional: Marinate the chicken in a mixture of baking soda, vinegar, and salt for 20 minutes to tenderize.
  4. Marinate the chicken in honey mustard sauce for 30 minutes to overnight.
  5. Preheat the oven to 375°F (190°C).
  6. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown, about 5-7 minutes per side.
  7. Transfer the skillet to the oven and bake for 10-15 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  8. Cook mushrooms and onions in the same skillet until soft and caramelized.
  9. Top each chicken breast with honey mustard sauce, sautéed mushrooms and onions, crumbled bacon, and shredded cheese.
  10. Return the skillet to the oven and bake for another 10-15 minutes until the cheese melts and bubbles.
  11. Serve immediately with your choice of sides.
